How to make a Spanish tortilla

One of the newer dishes on our menu that has quickly been loved by our guests, here is how to make a Spanish tortilla.


So, you may have seen the good news recently that we will be re-opening both baresca and escabeche on Saturday 4th July! We will be posting a longer blog next week with more info about how.


But in the meantime, let's continue to help yo

u 'be the chef.' This lockdown has brought on a home cooking revolution and we want to help bring the Catalan spirit of baresca to your dinner table.


Here's another recipe for a delicious Spanish tortilla.


Ingredients - Serves 6


  • 400ml olive oil

  • 650g onion peeled and finely sliced

  • 650g waxy potatoes

  • 6 free range eggs

  • Salt and ground black pepper


Method


  1. Heat the olive oil in a medium sized none stick pan. Make sure the pan doesn’t have a plastic handle as will need to go in the oven, add the onions and slowly cook for 30 minutes until soft and golden.

  2. While onions are cooking dice the potatoes into 1cm squares

  3. Add the potato to the onion and turn up the heat add salt and pepper and cook until potatoes are soft

  4. Stir the mixture frequently until it becomes soft then drain on kitchen towel

  5. Wipe the pan and add a good drizzle of olive oil and put on a medium heat

  6. Beat the eggs in a bowl, add the onion and potato mix, add a little more seasoning and gently pour into the heated oil, cook for 1 minute before placing in a preheated oven at 200 degrees for 8-10 minutes

  7. The tortilla should be slightly wet inside, if this is not to your taste then leave in the oven for a few more minutes.
